Queimada Gallega – Fire Water

A ritual as much as a drink.

Ingredients

• 2 liters grape brandy (aguardiente or grappa)

• 300 g sugar

• Zest of 2 lemons

• Zest of 1 orange

• About 10 coffee beans

Preparation

1. Place all ingredients in a clay pot.

2. Carefully ignite and step back.

3. Let burn for about 15 minutes, stirring to dissolve sugar.

4. Allow to cool slightly and serve in small cups—while chanting the traditional incantation!
